The family inheritance : Semoule à l’orange

Of all recipes, I think this one is the dearest to my heart. It comes from my grand-mother : let’s be honest she was no big cook but she did pass on this amazingly simple recipe. A delight each time.

Ingredients – serves 8

  • 3/4 L milk
  • 2 oranges – non treated
  • 50g butter
  • 3 eggs
  • 120g thin semolina
  • 100g sugar


Bring the milk to the boil with the orange zests. Add the butter. When properly melted, pour in the semolina in the boiling milk, while whisking. Let it cook for 3 to 5 minutes, still mixing. Then remove from the stove.

Add the sugar in, and the egg yolks one by one. Lastly add the firmly beaten egg whites.

Pour in your serving dish. Slice the oranges and lay them on the semolina to decorate.
