Sweet dough

Finding a good dough recipe is a little bit like finding a good man : you want to hang on to it because you know you will have lots of wonderful moments in the future. Also, let’s face it both are not run-of-the-mill !

I won’t share my man, but I can share my best sweet dough recipe…

Ingredients: serves 6

  • 200g T55 flour
  • 100g butter at room temperature
  • 80g powder sugar
  • 1 pinch of salt
  • 1 egg


Mix the butter with sugar, then flour, pinch of salt and finish with the egg. Let it rest 1 hour in the fridge before lining your baking tin.

If your filling needs baking : bake first the dough without filling for 10 minutes at 180C / 330F. Then bake another 25 minutes or so with your filling.

If you’re going for a strawberry pie, bake the dough until golden then fill with the strawberries.

Then let your imagination run wild for the filling : strawberry and vanilla custard pie, rhubarb pie, apricot pie… you name it
